MacDoo's EasyBrew pack is not Instant Coffee. It is made from coffee grounds, which contain more of the natural oils and flavors present in coffee beans, producing a richer and more complex flavor. Instant coffee powder, on the other hand, is a concentrated liquid made by brewing or freeze-drying coffee beans or grounds, which are then dried into a powder. Instant coffee is mostly made from Robusta beans and is known for its rich caffeine content.

Arabica, a good coffee?

Arabica alone does not guarantee good quality coffee!
Arabica is a general species of coffea, contrasting to another one of Robust. There are hundreds of coffee varieties within the Arabica species, ranging from commercial coffee beans priced at around $1.8 USD/lb (what you commonly see in the market) to the most expensive Geisha Panama, which can peak at $2500 USD/lb. In fact, only a few rare varieties of Arabica can be defined as good or specialty coffee.
Robust is comparatively rough, bitter without sweety; thus, mainly used as materials for brewing Instant Coffee. Seldom of people drink Robust directly. You could have seen coffee giants’ promotions in recent decades: 100% Arabica! In fact, most of our daily coffee drinking are all Arabica , while you have very few chance to drink a cup of Non- Arabica coffee in the market.

Boutique Variety Coffee

According to the book by Taguchi Mamoru, chief of SCA Japan, the variety of coffee is the foremost factor in determining a specialty boutique coffee. He further adds that the old varieties of Typica and Bourbon are the best choices for boutique and specialty coffee.

Typica is one of the oldest coffee varieties in the world, first discovered in Ethiopia and could be the forefather of all Arabica coffee. The coffee beans produced by the Typica plant are generally considered to have a classic or traditional flavor profile. Bourbon is the closest mutation of Typica, first discovered on Bourbon Island in 1715. Bourbon coffee is traditionally of fruity flavor with dense sweetness and clear acidity.

Typica and Bourbon, ancient natural coffee specices, are normally susceptible to rust disease and have low yields, making them rare to find in the world nowadays. However, their excellent flavors make them highly prized by both amateurs and coffee lovers. In fact, more than half of the 10 most expensive coffees are Typica and its mutations, such as Gesha, Blue Mountain, Kona, and Maragogype, while Bourbon takes three seats as well, such as St. Helena and Yellow Bourbon.

The human-developed varieties of coffee in recent decades seem to focus on fast-growing, anti-rust, high-yield rather than on the good flavors of coffee. However, Pacamara is an exception due to its excellent cupping characteristics, which are even more dense than its parents, Maragogype.

Three Waves of Coffee

Searching on google, you will get the general understanding on the 3 waves of coffee:
• 1st Wave (1800s): Instant Coffee, Nestle
• 2nd Wave(1970s): Ground Coffee, Starbucks
• 3rd Wave(2000s): Single Origin Coffee

Customers start to select and buy coffee based on its variety and production origin. Unlike the commercial coffee in the 1st and 2nd waves, people prefer to boutique varieties of coffee with light to medium roasting for tasting the natural coffee flavor, rather than caramel, milk cream, and flavor additives on it.
